GRAPES AND PRODUCTION:
Corvina 50% – Corvinone 20% – Rondinella 30% – 3000 bottles

AREA AND SOIL:

Vineyards in the locality of Casale in Marcellise, located 230 meters above sea level. with southwest exposure. Soil: marl, white rock rich in mineral salts.

WINE TRAINING AND HARVESTING:

Veronese pergola, 1970s planting. Cluster thinning in the month of August, harvest towards the end of September, with manual harvesting. Yield 60 q.li/ha

VINIFICATION AND AGING:

Spontaneous fermentation in concrete tanks without temperature control. Aging 24 months in tanks of cement and 18 months in bottle. Sulfur dioxide 30 mg/liter

ALCOHOL CONTENT AND PAIRINGS:

12.50% vol.

Elaborate first courses such as pasta with meat sauce or composite risottos and main courses of roasted-grilled meat, cured meats and aged cheeses.
