AREA AND SOIL:
Vineyard in the locality of Ponte Verde in Montorio (VR), located at the bottom of the valley, with southern exposure. Clay soil, of alluvial origin.
WINE TRAINING AND HARVESTING:
Guyot, 1995 planting. Harvest around the middle of September, with manual harvesting. Yield 90 q.li/ha
VINIFICATION AND AGING:
Spontaneous fermentation in concrete tanks. Aging 4 months in cement tanks. Sulfur dioxide 25 mg/liter
ALCOHOL CONTENT AND PAIRINGS:
11.50% vol.
Ideal with white meats such as veal tenderloin, mixed roasts and boiled meats, cured meats or fatty fish dishes, and fresh or medium-aged cheeses.
