GRAPES AND PRODUCTION:
Corvina 40% – Corvinone 40% – Rondinella 20% -. 2000 bottles

AREA AND SOIL:

Vineyard in the locality of Mezanela in Torbe (Negrar), located at 450 meters above sea level. with southwest exposure, clay soil, rich in stone of sedimentary origin.

WINE TRAINING AND HARVESTING:

Veronese pergola, 1995 planting. Cluster thinning in August and harvest in mid-October, with manual harvesting and careful sorting of the grapes. Yield 50 q.li/ha.

VINIFICATION AND AGING:

Spontaneous fermentation in steel tanks without temperature control. Aging 12 months in tonneaux of 500-liter oak, 24 months in cement and 18 months in bottle. Sulfur dioxide less than 30mg/lt

ALCOHOL CONTENT AND PAIRINGS:

14.00% vol.

Elaborate first courses such as pasta with meat sauce or composite risottos and main courses of roasted-grilled meat, cured meats and aged cheeses.
