AREA AND LAND:

Vineyard at Monte Martinelli in Montorio (VR), located at 190 meters above sea level with southwest exposure.
Red flake soil of sedimentary origin.

BREEDING AND HARVESTING:

Veronese arbor, 1950s and 1990s installations.
Thinning of clusters in August and harvesting first decade of October, with hand picking. Yield 50 q.li/ha

WINEMAKING AND AGING:

Spontaneous fermentation in concrete tanks. Aging 18 months in cement tanks and 12 months in bottle. Sulfurous less than 30 mg/lt

GRADATION AND MATCHING:

13.00% vol.

Elaborate first courses such as pasta with meat sauce or composite risottos and main courses of roasted-grilled meat, cured meats and aged cheeses.
