AREA AND SOIL:
Vineyard in the locality of Casale in Marcellise, located 230 meters above sea level with southwest exposure, soil of limestone origin.
WINE TRAINING AND HARVESTING:
Veronese pergola, 1970s planting. Cluster thinning in August and harvest around the first middle of October, with manual harvesting. Yield 60 q.li/ha.
VINIFICATION AND AGING:
Spontaneous fermentation in cement tanks with the skins for 15 to 20 days and subsequent maceration for 15 days. Aging 10 months in tankscement and 12 months in bottle. Without added sulfur dioxide.
ALCOHOL CONTENT AND PAIRINGS:
12.50% vol.
Ideal for shellfish dishes, boiled or grilled fish or white meats, medium-aged cheeses.
