AREA AND SOIL:
Vineyard in the locality of Arcandola in Marcellise, located 120 meters above sea level with southern exposure, clay soil.
WINE TRAINING AND HARVESTING:
Pergola, 1971 planting. Cluster thinning in August and harvest around the second half of September, with manual harvesting. Yield 80 q.li/ha.
VINIFICATION AND AGING:
Spontaneous fermentation in steel tanks, without temperature control. Aging 6 months in tanks steel and 3 months in bottle. Sulfur dioxide 15 mg/lt
ALCOHOL CONTENT AND PAIRINGS:
10.50% vol.
Ideal with roasted and boiled white meats, cured meats or fatty fish dishes, and fresh or medium-aged cheeses.
